  • Experiment with Food and Wine Pairings with The Perfect Dish for It: Pizza

In Food, Wine, Eating, Food Hacks, / 20 April 2012 / 0 comments

Experiment with Food and Wine Pairings with The Perfect Dish for It: PizzaPairing wines or other drinks with food may seem really complicated because of the intricate play of flavors. You don't have to have a sommelier's trained palate, though, to explore and learn more about how drinks pair with foods. One easy meal to use as your base is pizza.

Eric Asimov writes in the New York Times that, first, don't think of pizza as fast food. We're talking good, classic pizza made with fresh ingredients. It's perfect for a bunch of drinks, from beer to wine and even champagne:

Pizza is one of those rare foods with such versatility it can be enjoyed with an enormous assortment of different beverages. Sure, some things will clash, or deaden pizza, like very oaky wines with little acidity. But most pairings, including Champagne, work well. It's a joy to experiment and make your own discoveries.

Remember, though, don't worry about finding a perfect match. As Asimov says, "The probability is far greater that you will be right and happy than wrong and miserable, especially if you like the beverage you are serving in the first place. That's the most important point of all."

Hit up the link for some examples of how specific wine notes and flavors match up with pizza. For more help getting started, train your palate like a wine snob.

Repurpose a Rake Head Into a Wine Glass HolderIf you have an old rake head or find one cheap at a thrift store or yard sale you can easily repurpose it into a wine glass holder.

DIY household weblog Tattered Style recommends mounting the rake head with a few wood screws. If your decor is not rustic or eclectic enough to pull off the look you can paint the rake head so it does not stand out quite-so-much.

  • Hyperdecanting: Better Wine in a Minute, You Impatient Philistine

In Food Hacks, Wine, Timesavers, Food, Friday Fun, / 23 March 2012 / 0 comments

Hyperdecanting: Better Wine in a Minute, You Impatient Philistine Love wine but don't have the time, patience, or inclination to aerate your wine in a decanter forever before drinking? Former Microsoft CTO and master chef Nathan Myhrvold suggests a method he calls "hyperdecanting". Sounds fancy and high-tech, right? It's basically shorthand for "put your wine in a blender for a minute and it'll taste better".

Just about anyone who enjoys an occasional glass of wine will initially recoil at the idea. (I did.) Wine has an almost mystical quality for most of us, and surely only an unsophisticated fool would dump a perfectly good bottle of wine into a blender. But Myhrvold takes a scientific approach to food, the culmination of which can be found in his insane $450 book Modernist Cuisine: The Art and Science of Cooking, and in an article last year in Bloomberg Businessweek, he explains his method:

I just pour the wine in, frappé away at the highest power setting for 30 to 60 seconds, and then allow the froth to subside (which happens quickly) before serving. I call it "hyperdecanting."

Although torturing an expensive wine in this way may cause sensitive oenophiles to avert their eyes, it almost invariably improves red wines—particularly younger ones, but even a 1982 Château Margaux. Don't just take my word for it, try it yourself.

In his article, Myhrvold goes on to suggest how you might set up your own blind taste test to "determine with scientific rigor whether your tasters prefer the hyperdecanted wine". While we haven't given hyperdecanting a go just yet, decanting is a common practice, and at least in theory, hyperdecanting seems to make sense. A few folks have documented their hyperdecanting efforts, including all-things-four-hours author Tim Ferriss, a hyperdecanter who uses a submersion blender:

The wine obsessives at Vinum Vita tried it out, too (video at the top of the post), and at least seemed to agree that it changes the flavor of the wine.

Ever hyperdecant your wine? Share how it worked for you in the comments. As for us: We've got a (cheap) bottle of wine waiting to be blended this weekend.
